Ingredients:2 lbs jumbo shrimp2 celery stalks, thinly sliced1 jalapeño, seeded and finely chopped1 cucumber, chopped2 ripe avocados, peeled, pitted, and diced2 handfuls fresh cilantro, chopped½ small white or yellow onion, finely dicedJuice and zest of 2 limesJuice and zest of 1 orange11.5 oz can tomato juice½ cup tomato sauce2 garlic cloves, gratedHot sauce, to tasteSalt and pepper, to tasteInstructions:Boil a large pot of water. Add shrimp and cook until they curl into a loose “C” and are fully cooked. Drain and cool in ice water or under cold running water. Chop shrimp into bite-sized pieces.In a big bowl, mix shrimp, celery, jalapeño, cucumber, avocado, cilantro, and onion.In a separate bowl, whisk lime juice, orange juice, tomato juice, tomato sauce, garlic, hot sauce, salt, and pepper. Pour over shrimp mixture and stir gently.Refrigerate for at least 1 hour to blend flavors. Serve chilled and enjoy the fiesta!
