Ingredients:

  • 1 carrot, grated
  • ½ onion, finely chopped
  • ½ red bell pepper, finely chopped
  • 1 small handful of parsley (optional), chopped
  • 1 cup shredded cheese (mozzarella, cheddar, or a blend)
  • 2 eggs
  • 1 cup all-purpose flour
  • Salt & pepper to taste
  • 1–2 tbsp milk (if needed for consistency)
  • Oil for frying

👩‍🍳 Instructions:

  1. Prepare the Veggies:
    In a large mixing bowl, combine the grated carrot, chopped onion, bell pepper, and parsley.
  2. Add Cheese & Eggs:
    Mix in the shredded cheese and crack in the eggs. Stir to combine.
  3. Add Flour:
    Sprinkle in the flour gradually and stir until it forms a thick, sticky batter. Add a splash of milk if it feels too dry. Season with salt and pepper to taste.
  4. Fry the Fritters:
    Heat a non-stick skillet over medium heat and add a light layer of oil. Scoop about 2 tablespoons of the batter per fritter and gently flatten them in the pan.
  5. Cook Until Golden:
    Fry for 3–4 minutes on each side, or until golden brown and cooked through.
  6. Drain & Serve:
    Transfer to a paper towel-lined plate to drain excess oil. Serve warm with sour cream, yogurt dip, or your favorite sauce!

💡 Tips:

  • Add zucchini (grated and squeezed dry) or corn for extra veggies.
  • Make them mini for bite-sized party snacks!
