🧂 Ingredients:

  • 1 large head of cabbage, chopped
  • 2 medium carrots, sliced
  • 2 celery stalks, chopped
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 cans (14.5 oz each) diced tomatoes (with juice)
  • 6 cups vegetable or beef broth
  • 1 pouch Lipton Onion Soup Mix (any flavor)
  • 1 to 1.5 pounds ground beef or turkey (optional)
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • Fresh parsley or dill, chopped (for garnish)

🔥 Instructions:

  1. Sauté aromatics:
    In a large pot, heat olive oil over medium heat. Add the diced onion, carrots, and celery. Cook until softened, about 5–7 minutes. Add garlic and cook for another minute.
  2. Brown the meat (optional):
    If using ground beef or turkey, add it now. Cook until browned and no longer pink. Drain excess fat if needed.
  3. Add cabbage and liquids:
    Stir in the chopped cabbage, diced tomatoes with juice, and broth. Mix well.
  4. Add seasoning:
    Sprinkle the Lipton Onion Soup Mix over the soup and stir to combine.
  5. Simmer:
    Bring to a boil, then reduce heat to low. Cover and simmer for 1 to 1.5 hours, stirring occasionally, until the cabbage is tender and flavors meld.
  6. Season and serve:
    Taste and add salt and pepper as needed. Garnish with fresh parsley or dill before serving.
