Servings: 6–8 | Prep Time: 15 minutes | Cook Time: 1.5–2 hours
🧂 Ingredients:
- 1 large head of cabbage, chopped
- 2 small onions, diced
- 2 cans (14.5 oz each) stewed tomatoes
- 1 pouch Lipton Onion Soup Mix (any flavor)
- 1 large celery stalk, finely chopped
- 1 to 2 pounds ground beef
- Salt and pepper, to taste
- 4 cups water or beef broth (optional, for thinner soup)
🔥 Instructions:
- Brown the ground beef:
In a large pot or Dutch oven, cook the ground beef over medium heat until browned, breaking it apart as it cooks. Drain any excess fat. - Add vegetables:
Add diced onions and chopped celery to the beef. Sauté for about 5 minutes until the onions are translucent and celery softens. - Add cabbage and tomatoes:
Stir in the chopped cabbage and the cans of stewed tomatoes (with their juice). - Add Lipton Onion Soup Mix:
Sprinkle the pouch of Lipton Onion Soup Mix over the soup ingredients. Stir well to combine. - Add liquid (optional):
For a thinner soup, add 4 cups of water or beef broth. Stir again. - Simmer:
Bring the soup to a boil, then reduce heat to low. Cover and simmer for about 1 to 1.5 hours, stirring occasionally, until the cabbage is tender and flavors are well blended. - Season and serve:
Taste and adjust salt and pepper as needed. Serve hot.
✅ Tips:
- Add some crushed red pepper flakes for a little heat.
- Serve with crusty bread or over cooked rice for a more filling meal.
- This soup freezes well—perfect for meal prep!
